My Story

Hello, I’m Kim, RD and nutrition is my passion. I consult on nutrition and IBD-related research studies, IBD nutrition program development and educate practitioners. I also see pediatrics and adults with Crohn's and Ulcerative Colitis through a virtual private practice. I believe every person with inflammatory bowel disease deserves access to current nutrition information as well as individualized diet and lifestyle support.

From 2013-2018 I worked with pediatric patients at Seattle Children’s Hospital with various gastrointestinal (GI) conditions. The GI nutrition-related issues I saw ranged from food allergies to complex motility disorders, tube feeding, and chronic disease. I established the IBD nutrition program with a multidisciplinary team and ultimately specialized as an IBD, research dietitian. I realized the tremendous role that nutrition plays in disease management and that each individual’s unique IBD journey is not linear, but evolves with time.

Seeing the impact of food on our physical, mental and emotional well-being continually inspires me. I am passionate about educating and empowering individuals living with IBD to know how to nourish their bodies. A joyful and abundant life is possible!

My 3D-Dietary™ Approach

Our bodies are designed to “run on” the foods we eat. You may think of it like putting gas in the tank of a car and then burning it by driving, but it’s so much more than that. Imagine the car being entirely built out of fuel, cleaned by the fuel, and repaired by the fuel. Food gives us the energy to go, true. But it also helps all of our tissues and organs to function, and provides us the nutrients and information to regulate our bodily processes, move, think, grow and heal.

Yes, food helps us heal, and one of the many amazing ways it does this is by changing the balance of microbes in our gut — this in turn influences our immune gut integrity and nutrient absorption among countless other processes. In Inflammatory bowel disease, while the root cause is uncertain, we see that an imbalance of bacteria in the gut can play a role in intestinal inflammation, triggering sometimes debilitating symptoms. The inflamed intestines can have trouble absorbing nutrients the body needs. Rebalancing gut bacteria and restoring optimal nutrition through diet is a powerful way to break this cycle.

I am excited to share my experiences in IBD nutrition research and in practice working with hundreds and hundreds of IBD patients. My mission is to advance our understanding of how dietary patterns aid in healing inflammation experienced by patients with Crohn's and Ulcerative Colitis. With the right dietary protocol, which is unique to each person, individuals can see fewer and less severe symptoms and potentially attain and maintain remission — the ultimate goal.
